Workout Wednesday & a {healthy} Post-Gym Peanut Butter Cookie DoughTreat!

When I hit the gym during a super busy week, I love mixing up short bursts of strength & cardio to get the most out of my workout. Mixing it up also keeps your heart rate up because your body doesn’t get “used” to the same old steady routine, so you are able to get stronger, fitter, and faster in less time! This is the workout that I completed early this morning and I felt so energized and ready to take on the day afterward. I started out with a 15-minute run (6.5 mph) and then did the strength exercises back to back in a circuit so that my heart rate stayed high. I then topped it off with another 10-minute interval run, alternating between 6.0 and 7.5 mph every minute.

I have to admit that there are days when I would just love to eat a bowl of cookie dough by the spoonful as soon as I get home from the gym… that stuff is just addictive.  When I get home from the gym sometimes I immediately crave something sweet and not so healthy, however, I know that this will just make my energy crash shortly after.  That’s why I created this sweet little treat that will cure any craving. With just 250 calories and 21 grams of protein this makes a great healthy dessert or post-gym treat when you need a boost of energy! Added bonus: all you need is a few simple ingredients and this requires no cooking skills whatsoever 🙂 

Peanut Butter Cookie Dough Greek Yogurt
Serves 1

1 6 oz container of plain, nonfat Greek yogurt
1 tbsp peanut butter
1 tbsp semi-sweet chocolate chips
1 packet truvia
1/2 tsp vanilla

Directions: Mix all ingredients together and enjoy!

And just a little bit of encouragement for the middle of the week:

I have been really encouraged by this verse as I press on through the crazy days and continue to remember WHY I do what I do and remember that the Lord’s purpose and plan for me is so much greater than the daily schedules and circumstances.
