I love snacks. Sometimes almost too much. Especially when they come in the form of a cookie-like granola bar with peanut butter, oatmeal, and chocolate. Um, yes please. I have made this snack bars countless times as they are one of my favorite “in the baking mood but should not make cookies because I will eat all of them and I want a somewhat healthy snack.” That was a lot. But trust me, you will love these.
Added plus: they require no butter or eggs which is apparently something that I always run out of so that’s why this recipe was invented in the first place. No butter? No eggs? No problem. Thanks to the wondrous ingredient, peanut butter, these have a delicious texture and aren’t a dry, crumbly mess!
I am on a SERIOUS peanut butter kick recently. But honestly, I have been eating it out of the jar, putting it in all of my recipes, and then eating it out of the jar some more. If I could write a love letter to peanut butter I would tell it that it was the perfect food and to never change.
Moving on.. it’s Friday and I may or may not have ready-for-the-weekend fever.
I should just give you the recipe:
Peanut Butter Oatmeal Chocolate Chip Snack Bars:
1 cup all-purpose flour (I used gluten free all-purpose)
1 cup rolled oats
3/4 cup peanut butter
1 tsp baking soda
1/4 tsp salt
1/2 cup brown sugar
1/2 cup almond milk
1/3-1/2 cup mini chocolate chips (depending on how chocolate-y you want these!)
Optional add-ins: shredded coconut, white chocolate chips, dried fruit, nuts
1. Preheat oven to 350 degrees
2. Mix the flour, oats, baking soda, salt, and brown sugar in a large bowl
3. Add the peanut butter and almond milk and mix until a stiff-dough forms
4. Pour in the chocolate chips and mix until just combined
5. Press dough evenly into an 8 x 8 square pan
6. Bake for 18-20 minutes
7. Allow to cool completely before cutting into squares!
IT’S THE WEEKEND!! I am so excited for this weekend as I am celebrating my beautiful friend Hannah and her upcoming wedding with a bridal shower and girls weekend in Charleston. It is such a blessing to know her and I am so excited for the many festivities over the next two days! Pictures to come 🙂
