Flatbread Pizza with Sundried Tomatoes, Kale, & Goat Cheese

Although I am a huge fan of traditional, thick crust pizza, I am not a lover of the greasiness and carb overload feeling that tends to ensue after eating a huge piece or two. This flatbread, however, is already perfectly portioned, packs a veggie punch, and with less than 350 calories per pizza, is a nutrition rock star. This cute little pizza only takes  about 20 minutes to prepare from start to finish so it is perfect for busy days/nights, and will beat any pizza craving, minus the guilt and carb hangover 🙂

Flatbread Pizza with Sun Dried Tomatoes, Kale, & Goat Cheese
Serves 4

Ingredients:
1 whole-wheat flatbread (around 150-200 calories)
1 cup chopped kale
1 tbsp pizza sauce, optional (I like Trader Joe’s brand) 
1/8 cup sun dried tomatoes
1/8 cup light mozzarella cheese
1/4 cup goat cheese
1 tsp olive oil

Directions:
1. Preheat oven to 400 degrees.
2. Heat olive oil over medium heat in a saute pan and cook kale until wilted.
3. Top flatbread with sauce, cheeses, kale, and sun dried tomatoes
4. Bake at 400 degrees for 10-12 minutes.

Today marks the first day of my first “grown-up Spring Break” {aka the last one that I will ever have} and I am loving catching up on sleep, workouts, and plenty of new recipes that will be heading this way soon!
