I truly love nothing more than a beautiful spring day, and what’s a more perfect way to spend the afternoon/evening than a yummy picnic? So today’s post has a fun little twist: I have teamed up with four other talented bloggers and we will each be sharing a portion of a delicious spring picnic menu as well as giving away a fabulous picnic basket {see entry details below}.
For my portion of the picnic, I went with a refreshing appetizer of Strawberry, Feta, & Avocado Salsa with Whole-Wheat Tortilla Crisps that is perfectly seasonal and a huge crowd pleaser! This recipe is a unique spin on a traditional tomato based salsa and boasts a flavorful combination of sweet and savory as well as a delightful punch of basil that is phenom. I am in LOVE with this salsa!
Strawberry, Feta, & Avocado Salsa with
Whole-Wheat Tortilla Crisps
Ingredients:
Salsa
1 cup strawberries, chopped
1 avocado, diced
1/2 cup feta cheese
1 1/2 tbsp fresh lime juice
1/4 cup basil leaves, chopped
1/2 tsp sugar
1/4 tsp ground pepper (optional)
Whole-Wheat Tortilla Crisps
4 whole-wheat tortillas, cut into triangles
Directions:
1. Preheat oven to 375. Toast tortilla triangles for 8-10 minutes or until crispy.
2. In a medium sized bowl, combine the strawberries, avocado, feta, lime juice, basil, sugar, and ground pepper.
3. Serve immediately or refrigerate for up to 2-3 days!

Linda, I love making veggie scrambles with eggs and lots of fresh vegetables and herbs (my favorite combo is eggs, tomato, and basil!)
