So… I still eat oatmeal when it’s hot out. I don’t care if it’s 90 degrees or 30, this is still my most favorite of breakfasts. This is sometimes weird to me because when the weather turns spicy I can no longer drink hot coffee but switch solely to iced coffee for my morning caffeine dose. Somehow this doesn’t make sense but really though this oatmeal is deliciously different. I tend to get hungry about every two hours… but oatmeal is really the only thing that will keep me full past 9 am.
Instead of making with plain water or milk, this oatmeal is made with chai tea + vanilla almond milk for a perfect spiced chai flavor with a hint of smooth vanilla. I also added some fresh blueberries and sliced almonds for some extra antioxidants and healthy fats.
Vanilla Chai Oatmeal
Ingredients:
1/2 cup rolled oats
1 cup unsweetened vanilla almond milk
2 chai tea bags
1/2 tsp cinnamon
1 tsp brown sugar
Optional add-ins: blueberries, almonds, walnuts, apples, raisins, granola… the options are endless!
Stovetop Directions:
1. On medium heat, bring almond milk to a boil and add tea bags.
2. Steep for 3-5 minutes and remove the tea bags.
3. Bring back to a boil and cook oatmeal according to package directions for ~5 minutes.
4. Top with brown sugar, cinnamon, and other optional add-ins!
Microwave Directions:
1. Brew tea by heating almond milk + tea bags in a microwavable bowl or mug for 2 minutes.
2. Steep for 3-5 minutes.
3. In a microwavable bowl, add the almond milk to the rolled oats and microwave for an additional 3 minutes and 30 seconds.
4. Top with brown sugar, cinnamon, and other optional add-ins!
Health benefits:
Oatmeal: Oats have lots of fiber and B-vitamins and they are great for getting in your whole-grains for the day!
Blueberries: These delicious berries are packed with antioxidants and vitamins, you can’t get much better than that.
Almonds: Nuts are a great source of healthy fats (monounsaturated fats to be specific), which are shown to protect your heart. So eat up!
