This is a happy post today. With a happy happy recipe. I mean look at it. There are sprinkles everywhere. And this recipe is a double happy because it tastes like ice cream AND is a healthy and protein packed snack.
…Oh yea and it’s Friday. WOAH.
Being a self-proclaimed ice cream freak is hard sometimes when you need to eat actual food but all you want is a frozen dessert. And then this smoothie swoops in and saves the day! I have been making this creamy and dessert-like smoothie (you might as well just call it a milkshake) for a few years now, and i thought it was about time to share this deceptively healthy treat with the rest of the world.
What makes this blended treat taste like cake batter, you may ask? The almond extract is the KEY as well as the cottage cheese. Sounds odd, I know but once you taste this you will be in love…
Cake Batter Smoothie
1/2 cup fat-free cottage cheese
3/4 cup unsweetened vanilla almond milk
1/2 tsp almond extract
1 packet stevia
1 tbsp sugar-free pudding mix (I like using vanilla or white chocolate!)
1/2 tsp xanthan gum (this acts as a thickener)
4-5 ice cubes (or vanilla frozen yogurt)
Optional add-ins: peanut butter, cocoa powder, cinnamon, caramel
Optional toppings: sprinkles, chocolate candies, chocolate chips, the options are endless 🙂
Place all of the ingredients in a blender and blend until smooth + creamy consistency is reached.
This weekend is going to be another fun one as I am staying in Greenville for one of my “proommates” (aka past roommates) weddings at Chattooga Belle Farm, about an hour away from Clemson. Jenn + Ben are one of the most beautiful couples that I have ever had the opportunity to know, and I am so excited to celebrate the beginning of their future as husband and wife!
