Comin’ in hot with some yummy baked goods again. I made these for a friend’s birthday brunch recently and everyone gobbled them up…. not knowing that they were whole-wheat and a {semi) healthy treat.
When I was younger, I used to eat doughnuts on the reg. Especially when I was at my grandparent’s house and they let me have my favorite chocolate sprinkle Krispy Kremes while I watched Dumbo. Great times.
But now that I am an adult human, these baked, whole-wheat goodies will do just fine. 😉 These are the perfectly cake-y and the cinnamon sugar topping is the icing on the cake (well…the doughnut, but whatever). These are also super easy and only take about 30 minutes to whip up. You can buy a doughnut pan pretty much anywhere that sells kitchen supplies, no fancy equipment needed!
Baked Cinnamon Sugar Doughnuts
{makes 12 doughnuts}
Ingredients:
2 1/3 cups white whole-wheat flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp ground cinnamon
1/2 tsp salt
1 egg
1/2 cup white sugar
1/2 cup almond milk (skim milk or soy milk work also!)
1 tbsp vegetable oil
Cinnamon sugar topping:
1/4 cup butter, melted
1/4 cup white sugar
1 tsp ground cinnamon
Directions:
1. Preheat oven to 350 degrees
2. In a large bowl, beat together the egg, sugar, almond milk, and vegetable oil.
3. In a medium sized bowl, combine the flour, baking powder, baking soda, cinnamon, and salt.
4. Add the dry ingredients to the wet ingredients and combine until a thick dough forms.
5. Divide batter into a greased doughnut pan evenly.
5. Combine the sugar and cinnamon for the topping in a small bowl.
6. Melt 1/4 cup butter in a small bowl and brush the tops of each doughnut before sprinkling with the cinnamon sugar mixture.
7. Bake the doughnuts for 10-12 minutes, remove from pans, and allow to cool on wire racks.
8. Enjoy!
Happy Monday! I read this verse this morning and was so encouraged by the reminder that although life is crazy and so uncertain right now, I live for someone SO much greater who loves and wants good things for those who trust in Him!
