Skinny Blueberry Margaritas

This past weekend, I headed home to Charlotte to celebrate Father’s Day and visit the fam. It has been quite a while since I have been home so it was nice to have some downtime and force myself to take a little break for a few days.

On Saturday night, I had a vision for a Mexican-themed Father’s Day fiesta (of course) and was inspired to make a margarita out of the blueberries that we had in our fridge. Now naturally I had to go and make these a “skinny” version and used no added sugars or weird syrup.

This unique and lightened up margarita is the bommbbbbb. These are SO delicious and are the perfect blend of tart, sweet, and refreshing!

I was going mad with the Magic Bullet blender while making these. There were blueberries/lime juice/tequila everywhere. Sorry family. When I have a vision I just gotta go with it, ya know?

Skinny Blueberry Margaritas
Makes 4

3/4 cup Trop 50 orange juice
1/3 cup key lime juice
1/3 cup blue agave tequila
6 oz fresh blueberries
2 packets of Truvia/stevia
6-10 ice cubes
Salt/sugar for rim
Lime for garnish (optional)

1. Place the OJ, lime juice, tequila, blueberries, Truvia, and ice in a blender and blend until smooth.
2. To line the rim of the glass cut a lime into wedges. Rub with lime over the edge of the glass. Dip the rim into the sugar or salt.

Hope everyone had a beautiful weekend!!
