Oh hey remember last week where I talked about that kind of mess of a bowl called an acai bowl? Well apparently I really really liked it because I spent yesterday afternoon trying to recreate my own version at home.
Although these bowls do have a solid ingredient list, they are super easy to make and extremely versatile. They make the perfect “power breakfast” as they are packed with fruity freshness. If you have never heard of acai, it is a tart, slightly sweet berry that is packed with antioxidants.
The acai bowl base is made of a frozen acai “smoothie pack” by Sambazon mixed with almond milk, frozen fruit, and any other “throw-ins” of your choice. Then for the toppings…the fun part! I topped my bowl with berry granola, shredded coconut, blackberries, and kiwi. The options are endless.
Think of these as the even healthier version of fro-yo 🙂
Acai Bowl (makes 1 bowl)
Ingredients:
Acai base
1 frozen pure acai berry smoothie pack (I use Sambazon packs. Available at Whole Foods!)
1/4 cup plain greek yogurt
1/4 cup almond milk
1/2 frozen banana
1-2 tbsp hemp protein powder (optional)
Toppings:
1/4 cup granola
1-2 tbsp unsweetened, shredded coconut
Fresh fruit
Honey (optional)
Hemp seeds (optional)Â
Directions:
1. Toss all of the base ingredients in a blender and blend until smooth.
2. Pour into a bowl, throw on your toppings, and enjoy 🙂 (pretty simple, huh?)
